I'm fairly new here so I'm just browsing around and came across this post. I'd like to state my opinion on the questions posed.
PAST LIFE MEMORIES/PHOBIAS
"Are they just ancestral memories and fears passed down through genetics?" - I'd say no, definitely no. If memories were purely ancestral and genetic I'd say more people in your family tree may try to claim the memories you do. Your memories are quite often very personal.
DOING THE MATH
"There is no denying that there are more humans on Earth today, than there ever has been. Doesn't this create a sort of imbalance? How does this make sense in the grand scale of things?" - I think new souls are constantly created. Some people recall lives from thousands of years ago, whereas other people recall lives from hundreds of years ago. Others not even that. I think soul age is the answer to this question.
EVOLUTION OF REINCARNATION
"When and how did reincarnation begin? Is there any conclusive evidence to this?" - I look to Vedic ideology to answer this question. The idea of reincarnation sprouted from religious doctrine/texts.
"Can a human soul reincarnate into an animal or vice versa? If not, do animals experience reincarnation amongst their own species?" - According to Sanatana Dharma, Hinduism, yes. You can change species to species.
SIMILAR APPEARANCE
"Do we look most similar to our most significant past life, or a mixture of past lives? However it is said that humans share a certain set of genetics which make us look very similar to someone we may not be directly related too." - From the past lives I recall, I generally look exact each time. There are slight differences because of genetics, ethnicity and gender but all in all I look the same practically. I think it is all for a sense of recognition. But not all people choose to look the same from time to time, nor do I think all people have the ability to choose.
CHOICE
"Do we get a choice as to whom we are reincarnated as, or are we just placed in the most compatible human?" - I think we can choose our location for the most part, depending on how advanced our souls are.
FINALLY
"Do we always reincarnate til the end of time? Or is there a limit, a point where our soul stops? If so, why and what happens then?" - No. We reincarnate until we break the cycle of Samsara and reach enlightenment. At that point we return to God, or whatever other decision we choose in the end. Perhaps to return to Earth as a Bodhisattva.
RIDICULOUS
"It may seem like a ridiculous question, but if there were extra terrestrial life out there, wouldn't we share reincarnations with them haha? Don't suppose it works like that though." - I fully believe in extraterrestrial life. By no means is it impossible to reincarnate as an extraterrestrial life form.
